Low Glycemic Chicken Parm Dinner

Off to the freezing cold weather we go and boy oh boy do we yearn to eat something warm and comforting!  At least I do.  So, after visiting New York for a week, I realize how easy it is to binge on Italian food, or foods in general that make you feel good from your “core”.  And so, another amazing JZ approved meal that is easy to make, yummy to eat and cheap enough to feed yourself for several meals and/or for your family.


Chicken Parm dinner with Sweet potato

Whatcha need:

  1. Kosher lean chicken or lean organic chicken (5 oz each)
  2. Crimini mushrooms in bag
  3. Low fat mozzarella cheese
  4. Ariabatta sauce
  5. Garlic
  6. Salt and Pepper
  7. Egg whites (Eggology)
  8. Almond meal
  9. Grape seed oil
  10. Sweet potato
  11. Sour cream or ketchup (2 tbsp=1 serving)

What to do:

Simply get a frying pan out.  Put 2 tbsp of grapeseed oil into the pan.  Dip the chicken into Eggology and cover with almond meal.  Once covered, place in skillet.  Cook 100% but not till dry.  Then, line a pan with tin foil and place each cooked piece onto the pan.  Line each chicken breast with crimini mushrooms.  Then, take 2-4 tbsp of Ariabatta sauce and drizzle on top.  Then take a small fistful of mozzarella cheese to go on top of that.  Whew!  Now, place the chicken into the oven to melt da cheese for 5 minutes.  Be sure to check the chicken cause I didn’t fully cook a piece and the chicken was slightly pink-heck to the no will I be caught eating chicken that has any risk involved, so be sure to check that out for food safety ok?

In the meanwhile, I simply microwaved a full sweet potato in a shallow bowl with some water on the bottom of it for 5 minutes.  That thing softened up like you wouldn’t believe.  Then, I carefully removed the very hot sweet potato from the nuker and cut it up into discs.  You can choose ketchup or sour cream light for the discs, or eat plain with the chicken parm dish.  This was so filling.  Enjoy!  And please note this recipe for Christmas dinner which is just weeks away!..I will provide additional low glycemic meals for X-mas so be sure to opt into the JZ FITNESS TIMES newsletter which you can through the home page of this amazing website.  Peace out and lotsa love for your beautiful body-your temple!
