Scallops and Cauliflower Rice

This dish is the bomb baby!!!!  If you love super easy, super quick and super yummy food, then you will love this dish. All purchased at Trader Joe’s (um, if anyone knows the CEO of  Trader Joe’s please tell him or her to call me and make me their ambassador because I am constantly making mention of them) and this meal can serve your whole family.

So here it is:

  1. Wild Frozen Jumbo Scallops (yes, in the frozen section)
  2. Organic broccoli
  3. Cauliflower rice (not organic unfortunately but get over it-unless you rice your own head of cauliflower and for that, you take up more time so have fun with that one) They have frozen or refrigerated.  I get the frozen.
  4. Organic spinach
  5. Grass fed butter (yes, butter!  This actually makes the dish so dang tasty)

What to do:

Grab 3-4 scallops per person you are cooking for.  Put them in a cold bath in a bowl to defrost.  Take out your frozen cauliflower rice too if it is frozen and hit the bag against a counter to separate the particles in the bag (oh boy is this a scene!) While you defrost this stuff, go take a shower and when you are done, they will be ready to cook. (I’m not kidding!)  Then, in a wide open all clad pan (love love love these pans. Super easy to clean post cooking), put in a teaspoon of butter and let it melt (not burn.  Yeah, mine burned so I had to swish around the burned butter so learn from my mistake).  Add in the scallops.  Then add in the broccoli.  Then the spinach.  Then add in the cauliflower rice since it doesn’t need a lot of time to cook.  Make sure you turn the scallops over to cook both sides.  I like to split them in half to get the inside cooked thoroughly.  Mix the veggies together….And wait!  I am sure you are wondering how much veggie to cook.  You want every person at your dinner table to have 3-4 servings of the combined veggies.  Does that answer your question?  If you still have no idea, then download the JZ FITNESS NUTRITION app (ANDROID HERE)  and learn about what a serving is.  Yeah!  Learn! 😉
