Grilled Chicken and Sautéed Veggie Medley

Okay, call me obsessed with cauliflower rice, and you are right.  I love this stuff.  They sell it at Trader Joe’s and it is found in both the freezer and refrigerator sections.  You can even make it yourself by grating a head of cauliflower.  Nah. Who the heck has time?  You might.  I don’t.  I like the quick way.  Remember, we do not live in a perfect world so if you are striving for perfection, then perhaps this site isn’t for you.  I am realistic and look for fast ways to provide the most optimal options given the circumstances.  And from what I hear most of the time, people want fast.  So here it is.

So with that said, if you are still reading, this dish is amazing.  Very simple.  Assuming you always have grilled chicken on hand, all you will need are your veggies and you are ready to rock.

What you need:

  1. Cauliflower rice

  2. Organic spinach

  3. Broccoli

  4. Ghee or grass fed butter

  5. Goya Adobo seasoning for the chicken

  6. Organic/kosher chicken breasts (no it doesn’t need to be kosher, but I taste the difference so that is up to you)

  7. Pineapple (optional)

What to do:

Cook all your chicken at once.  Make your life easy.  Do not plan on putting heavy sauce on your meat.  Seasoning such as Adobo do the trick.  I bought mine online cause not a single store had it in LA.  Go figure.  I used to not like chicken too much either because it was too “fleshy” so I have learned to alleviate this mental block by smashing the crap out of the meat before seasoning and cooking it.  It tastes so much better this way.  Click HERE for the device to kill your meat-lol.

I personally love the taste of BBQ chicken.  No sauce, just the grill, the spices, the short amount of time needed to cook it.  Along side the chicken, I usually grill up a whole bundle of asparagus too so that I can have chicken and asparagus or toss the grilled asparagus into salads during the week.  Just a side note.

Going back to this dish; in an all clad pan, I put in 1 tbsp of butter and sauté the cauliflower rice, broccoli and spinach.  I usually cook for just one person so the amount is equivalent to 3 cups of all combined.  You can even toss in some cubed pineapple to this particular dish if you wish to get super creative.

After sauteeing all these ingredients together, only using some butter or ghee, you can then add in the pieces of chicken breast to the mix and eat together.  It is so dang good.  And so easy.  Simply double the portions for more than one person.  If you need more carbs, you might consider adding 1/2 sweet potato if you are coming from an intense workout. You can top that sweet potato with salsa if you wish.
