Sunday prep

Everyone loves the weekend to lay back, relax and just do nothing.  Others work on the weekends because they must.  Others are spontaneous and do whatever comes up.  The bottom line is that Sunday must have an allocated minimum of 1 hour of your very precious time to simply plan your meals for the upcoming workweek.  It is crucial to set yourself up with healthy meal options, especially in the beginning of the week when you are on the go during that Monday rush!

Kathy Kaehler, one of my favorite fitness experts, has a Sunday Set Up club for those of you who are interested in actually participating in something unique that will ensure follow through.  We all need a structure.  Sometimes you just need an accountability system to help you to follow through.  I would consider checking her site out to see how this can help you.

Today, I went to the farmers market and bought the following fresh items:

Garlic, Onion, Kale, Carrots, Cauliflower, Broccoli, Strawberries, Parsley, Tomatoes, Zucchini, and Dark Green Lettuce.

With those items, I juiced for tomorrow ( I love my green juice!), baked some zucchini and cauliflower in the oven with olive oil and salt, and prepared a massive amount of organic ground chicken meat with all those awesome fresh veggies.  Here is how:

In a big pan, put in equivalent to 4 tbsp of olive oil and spread throughout the bottom.  Throw in some fresh minced garlic with onion and allow to cook for 3 minutes.  Throw in the chopped chicken meat to cook with Italian seasoning and some extra garlic powder.  Cook all the way through.  Then, throw in all the veggies; cauliflower, broccoli, tomatoes, zucchini and parsley.  You may even add in 1 cup of garbanzo beans or some other bean if you wish.  Serve with a side green salad.  Put all the leftovers in separate tupperware so that you can grab and go!

The point is, being healthy requires your commitment to shifting your focus back to yourself each day and strategically setting your week up for a successful healthy outcome.  You are the only one who can care enough about yourself to make this happen.  Are you motivated to do so?  If not, ask yourself why and then figure out how to make it happen.  Remember to read Breaking the Chains of Obesity.  This toolbox of how to answers may be a very good beginning for you.  But, don’t wait.  Start today! xo JZ
