Ditch the Spaghetti and go Veghetti

You can take the girl out of the city but the city remains in the girl.  New York baby, where Italian food is off the charts.  Growing up on that cuisine leaves a lasting craving on my taste buds for life, even though I lead a fit life.  Now, I am not one to deprive myself.  For example, I went to dinner with my man for his birthday last week and I ordered chicken Parmesan.  We went to the famous Rao’s so I had to.  So what! Yes it is breaded and yes it is more than one serving.  Do I do that every day?  Heck to the no.  Otherwise, I would be overweight, and perhaps obese!

That’s why my quest is to always  search for alternative ways to enjoy my favorite types of food, without feeling bloated and slow.  If you follow my lead, you too can feel great while looking great.  At Bed Bath and Beyond, they sell this device called the Veghetti.  Don’t forget to bring your 20% coupon or $5 off.  (hee hee)  This vaghetti thingy allows you to push whatever vegetable you want through the opening and turn it to cut it up into vegetable spaghetti, hence veghetti.   Now how come I didn’t think of this amazing device?  Super easy to use, clean and dang did this dish come out great.  Try it. When you buy this device, it also comes with a recipe book.  Be sure to remain gluten free and simply add a protein to whatever dish you choose.  Enjoy!

Oh, one small disclosure:  I went to a launch party for Schique beauty line on June 25th, and I was dared to post a “funny face” on Dr Jacqueline Schaffer’s instagram.  Since I trust that this product wouldn’t clog my pours and cause blemishes to my beautiful face, I followed Dr Jacqueline Schaffer’s orders.  So, pardon my appearance for this post.  I just find it important to be a great friend, trainer, or whatever you wish to call me.  Besides, why not kill two birds with one stone: do the mask and cook your dinner-brilliant girl, right? Ok, time  to cook!

What to get:

Vaghetti maker

Zucchini

Chopped onions (TJ’s sells them in a bag)

Empire low fat turkey meat (any low fat WHITE meat)

Grapeseed oil

Adobo spice (or any poultry spice)

Low sugar marinara sauce with garlic and basil

What to do with all of this:

Take about 4-5 thick zucchini stalks and vaghetti them.  Put the strands of vaghetti on a separate plate.  Once done, set aside. Next, use a wide deep pan to cook the meat and line the bottom with grapeseed oil. You will light the pilot to a medium flame.  Put the whole ground turkey into the pan.  Sprinkle in 1/2 cup of chopped onions. Sprinkle the Adobo or spice over the meat.  Flatten the meat so it cooks quicker.  Ensure that the meat is cooked through (you can tell because the meat turns brown/gray vs. red and fleshy) I like to break the meat up so that it increases the surface area and cooks quicker.  Sprinkle Adobo throughout the cooking process.  Once the meat is cooked, add the whole jar of sauce along with any extra garlic powder you wish.  Stir well.  Then add the vaghetti and stir some more for about 2-3 minutes. Then serve and enjoy!  So so so good!  Check it out below:
