White Fish Scampi and Cauliflower Rice Medley

My mother called me the other day telling me to run to Trader Joe’s to get this cauliflower rice in the frozen section.  I said ok.  Days later, she checked in on me to see if I got it and I didn’t because Trader Joe’s didn’t have it. Well, finally, they got it in and I bought two bags.  This stuff feels like you are eating rice.   While I’m not a huge rice fan, my mother who is on a health kick loves rice and she likes that this stuff mimics something that she knows isn’t optimal for her health.

When I bought it, I decided to also get myself a nice piece of white fish to grill up too.  But then I felt energized to get a bit creative.  So, below, you will find a new fish recipe that is amazing. When coupled with this cauliflower rice stuff (if you don’t have access, simply cut up cauliflower into little pieces and it’s the same deal) the total dish is filling, it’s delicious, and it’s JZ FITNESS NUTRITION approved! 

What to get:

White Fish Scampi

  1. Deboned fillet of flounder or any white fish
  2. Crab meat (optional)
  3. Yellow onions
  4. Mini tri-color bell peppers
  5. Goat cheese
  6. Dijon mustard
  7. Lemon
  8. Eggs (2)
  9. Salt and Pepper
  10. Olive oil
  11. White wine
  12. Turmeric

Cauliflower Medley

  1. Cauliflower rice from Trader Joes (frozen section) OR Cauliflower florets
  2. Broccoli florets (organic)
  3. Grapeseed oil
  4. Plum vinegar (or red wine vinegar): get this at a health food store such as Whole Foods
  5. Balsamic glaze
  6. Coconut aminos (low sodium): get this at a health food store such as Whole Foods

What to do:

As you can see, this recipe includes many more ingredients than I usually use.  However, this dish is amazing, so if you are like me, you will move quickly in whipping this up and not focus so much on measuring stuff out so much.  Keep it simple for yourself. The only items you need to concern yourself with measurements is how much oil you use, how much fish you eat, and how much cheese you use.  Other than that, all the other stuff can be thrown in with your eyes closed essentially.  Well actually, for safety, keep your eyes open!

Starting with your fish.  If your fish is purchased frozen, then thaw it out.  Let’s first prep the filling.  Dice up the onions and peppers. Place on the side.  Next, take out a tbsp of goat cheese and the two eggs and mix that in with about 1/2 cup of crab meat if you choose to use it.  If not, then just mix the eggs and cheese with the peppers and onions.  Begin adding lemon to it  along with a dash of salt and pepper, 1 tbsp of dijon mustard and 2 tbsp of white wine.  Then, take your flounder and cut a hole into it.  You can also slice it into halves, keeping one side of the halved fish connected so you can fold it over the contents.  Once all the inner ingredients are added together and mixed, stuff the fish.  Top the fish with an olive oil glaze and sprinkle turmeric on top.  Then, bake in the oven for about 20 minutes at 375 degrees.

On to the Cauliflower medley.  Start cooking this part 5 minutes before the fish is done cooking.  This part is easy.  Line a big pan with grapeseed oil.  Simply take a whole bag of frozen cauliflower rice from Trader Joes and toss into pan.  Add in about 2 cups of broccoli florets.  Pour on some plum vinegar, and line the top of the medley with several lines of balsamic glaze.  Last give a few dashes of coconut aminos and mix everything together in the pan.  Cook for about 5 minutes and that’s it.
