Mushroom Pizza

Once again, the New Yorker has come up with another alternative to carb loaded pizza. Who needs a pizza crust when Mother Nature provides other options?  Ok, I am not a complete fool.  I do love my occasional “standard” slice of NY pizza but on all other days, standard pizza isn’t nutritious and it is fattening.  Call it paleo pizza, low GI pizza, gluten free pizza-whatever tickles your mind…I accept!  Instead of not having any hint of pizza, enjoy this mushroom pizza which tastes pretty dang good.

Super easy (of course!)  Just follow the directions below and realize that the timing is perfect.  Serve it as hors d’oeuvres this holiday, whether at your office or holiday party.  Teach your peers and family how to break their chains from poor behaviors this holiday.  Help someone dive into the new year with a solid plan of good health.  Let’s rock this holiday and be fit for 2015!  Enough talk, take action!

What to get:

  1. Portobello mushrooms
  2. Organic asparagus
  3. Organic broccoli
  4. Parmesan cheese
  5. Marinara sauce (garlic flavored)

What to do:

 Set the oven to 350 degrees.  Take each portobello mushroom and carve out the center until the mushroom is hollowed out.  Cut up the asparagus into small pieces.  Break apart the broccoli.  In each mushroom, fill up the inside with both the broccoli and asparagus pieces.  Leave enough room to place some marinara sauce inside.  Sprinkle some parm cheese on top.  Bake in the oven for 12-15 minutes.  Check to see that the contents are hot, not burnt.  Serve hot and watch this dish bring a smile to people’s faces.  For more Italian ideas, click here or here.
