Chicken and Parmed Veggies

I always like taking my imagination and pouring it into a new dish.  Even more awesome is when the new dish takes minutes to make and doesn’t require a lot of ingredients.  This dish just happened to be simple, easy, quick and delicious.  Off the charts actually.  (my favorite expression, especially for dishes that deserve such credit).

 

What you need:

  1. Organic lean chicken breasts
  2. Tajin seasoning (looooooooooooove this stuff)
  3. Cayenne pepper
  4. Garlic powder
  5. Organic zucchinis
  6. Organic broccoli
  7. Organic bell peppers (baby ones)
  8. Grapeseed oil
  9. Parmesan cheese (remember that cheese is a condiment so sprinkle on with care if ya know what I mean)

What to do:

On the BBQ grill, BBQ the chicken breasts AFTER you season them with the cayenne pepper, garlic powder, and tajin.  You can always bake this if you don’t have a grill.  In the meanwhile, chop up all the veggies and simply toss them into a wok with some grapeseed oil (no more than 4 tbsp).  Stay by the wok and toss those veggies around so they don’t burn.  Then, sprinkle some Parmesan cheese and even tajin over all the vegaroos.  I usually know the veggies are cooked once the broccoli turns dark green.  Does that make sense?  If not, try it and it will.  Check out my video clip.  Enjoy the dish.  It should serve the whole family.  The veggies are so dang good you might want to triple the amount that you buy cause I ate 3/4 of the pan in my meal (remember, you can never overeat veggies).
