Scallops -n- Stuff

For those of you who love scallops, this dish is a keeper.  I literally gathered up a bunch of different ingredients and simply combined them with scallops.  This dish was off the charts and EASY to make.  Got a BBQ grill?  Then even quicker.

All you need:

  1. Wild scallops
  2. Butter
  3. Fresh crushed garlic
  4. Capers
  5. Lemon
  6. Red onions
  7. Organic asparagus

What to do:

On your BBQ is easiest.  Simply load the grill with lemon and (2 tbsp butter) soaked scallops, covered in fresh garlic.  Cook them carefully because these suckers cook quickly and if you overcook them, they will end up being quite rubbery.  (I have been guilty of this).  Alongside the scallops, combine all the other ingredients in a BBQ safe tin: capers, diced onions, chopped up asparagus, lemons, garlic, and other spices such as cayenne pepper and/or tajin, and/or turmeric.

Then combine all ingredients together with the grilled scallops and boom, you’ve got this scallops -n-stuff situation.  Yum!
