BBQ Chicken and Veggies

There is nothing more awesome than having dinner ready for you when you come home from a very long day, let alone a long week.  On a Friday night, my man cooked up this amazing BBQ dinner on the grill among the pouring rain just to provide me with optimal home cooked nutrition.  I am grateful.

You know me.  I only like to share meals that don’t take too much of your time (especially if you are the one cooking the meal).  It is pretty straight forward and this meal was off the charts- amazing.  Always put love into your dishes and you will find that the magic in your mouth is unbelievable.

What to get:

  1. Kosher chicken or Free Range Chicken
  2. Mushrooms (a carton)
  3. Red onion
  4. Organic spinach
  5. 3 Tri-colored peppers
  6. Asparagus
  7. 21 Seasoning from Trader Joes
  8. Salt
  9. Pepper
  10. Garlic

What to do:

Cut up the chicken into little squares and season with the 21 seasoning from TJ’s.  Alongside the chicken, place the asparagus in a tin covered in a dash of salt.  In addition, cut the peppers and onion into vertical slices and grill those too.  In the meanwhile, caramelize your mushrooms using grapeseed oil, pepper, salt, garlic and tajin in a skillet.  This will go on top of the chicken once all is done.  You may microwave or stir up the spinach in a pan to cook it up.  Place the spinach on the plate first when you go to serve it (1 cup equivalent) and place the chicken on top of the bed of spinach alongside the other BBQ veggies (asparagus and peppers and onions).  Place the mushrooms on top of the chicken.  Boom, dinner is served!
