Easy Snack: Egg salad lettuce wrap

I don’t know what to eat for a snack?  A bar?  No?  Thenwhat?”  This is the common stream of questions and concerns I get when working with people in lifestyle coaching. I know, I know, there aren’t enough hours in the day to be in the kitchen and truly serve your being with the best of the best prepared meal options. But, let me share with you my evening so far and perhaps you might suddenly get inspired.

After being at work at 6:45 AM and having a full day with patients, virtually non-stop, I came home, did my laundry, wrote a corporate wellness newsletter, 2 articles, sent out Breaking the Chains of Obesity, 107 Tools to various JZ Fitness enthusiasts and returned countless emails.  3 1/2 hours later, I create this blog so that you have yet another idea on how to eat well.  So, you don’t have time?  Ha!  Come on!  No more excuses, just make it happen, ayt?  Stop putting the world before yourself.  The world is your oyster, remember!

So, I have a new love that I will share as an easy, and I mean very easy snack idea.  Butter lettuce wrapped around some sort of summer salad, such as an egg salad.  What you do is go to Whole Foods Market and buy a plastic canister with live organic butter leaves.  You seriously feel like this stuff came right from the ground, and you certainly taste it too.  Yum!  Then, make a summer salad of choice.  How bout some egg salad?  Proportions of ingredients will vary depending on how many people you will share this with, so below is for 4 servings.  Add as needed.  Enjoy!

Egg salad lettuce wrap:

  • Eggs: 20 total cooked hard boiled eggs
  • 14 Cage free egg whites (ditch the yolks OR purchase a canister of EGGOLOGY which is already broken into Egg whites without the hassle of you doing it yourself!)
  • 6 Cage free egg yolks
  • Organic celery
  • Mayo (2 tbsp of olive oil based-that’s it)
  • 1 tbsp Honey
  • Distilled vinegar
  • Salt
  • Pepper
  •  Dash of paprika
  •  Dash of cayenne pepper
  •  Lemon 

Once you make your egg salad, put a fistful-worth into small little separate containers and add the salad to the lettuce right before eating.  This is a fabulous snack to pack for the kids too.  So yum!  Check out my video of pure fun eating this thing!  Try it and let me know what ya think!
