Seafood and spaghetti squash gumbo
So filling and so easy. This is what everyone is always looking for so I will continually provide it. All you need to do is go to Trader Joes with this shopping list below. If you have to feed more than 3 people, double up on the recipe. Otherwise, simply get these items and get ready for a great meal.
Ingredients:
- TJ’s Cioppino Seafood Stew (frozen section)
- 1 bag of frozen organic broccoli
- 1 jar of organic low sugar marinara sauce
- 1 small spaghetti squash
First heat the spaghetti squash in the nuker for 15 minutes. You can also cook it on the stove, but nuking it is so much quicker. When you are 6 minutes in, start defrosting the Cioppino mix. Run water over the sauce packet. Then, toss those contents into a big pan. Let the seafood cook completely, and add in 1/2 cup of marinara sauce from your jar. The sauce that comes with the meal isn’t enough for the additional ingredients. Add in the entire frozen broccoli once the fish has been cooking for at least 5-7 minutes. Then, take the spaghetti squash and comb through it and put the strands into a separate bowl. Be careful with those seeds. I messed up and accidentally put them into the stew and found myself spitting them out as I was eating this delicious meal. Terrible! Once the strands are combed, throw the spaghetti squash into the mix and stir for 3 more minutes mixing all the contents together. You can even sprinkle on some garlic into there. This dish takes minutes to make so be ready to multi task and eat a very filling meal with your family and spread the wealth of good health!
