Paleo Pancakes

Super easy. Super good. There is even room to toss some veggies into this one. Veggies in pancakes? Yup!!!! So here ya go! Enjoy!!

What to get:

  • Almond flour (Trader Joes has it cheaper than most places):

  • Egg whites

  • Unsweetened apple sauce (get the 6 pack mini containers cause then your big jar doesn’t go bad)

  • Coconut oil

  • Vanilla extract

  • Baking powder

  • Grass fed butter (I use kerry gold)

  • Cinnamon

  • Zucchini

  • Blueberries

  • Heavy whipping cream (if you have the patience to whip it) or regular whipped cream

Some people don’t want to mix all these ingredients together so check out Julian Bakery and simply add in the zucchini to the mix.

What to do:

If your goal is to serve 2 people, follow portions listed below, and go according to how many will be served.

1/2 bag of almond flour. 1/2 cup of the egg whites. 1 tbsp of coconut oil, 1 tsp of butter, 1 small container of apple sauce, 1 tsp vanilla, 1 tbsp baking powder. Shred up 1 whole zucchini using a grater until it’s in string-like pieces. Mix all ingredients together. On a skillet, place some coconut oil or avocado oil onto the pan. Form individual pancakes, the size of your palm. Fry, but pay close attention not to burn these.

In the meanwhile, for those of you who want some protein in this meal, in a separate pan, fry up some egg whites for the side. Men; almost a cup. Ladies; 1/2 cup. Use a little avocado oil to cook it in. Another option for protein is to simply add in a clean pea protein based vanilla powder such as Sunwarrior or even Juice Plus.

Once all is done, serve together, pour some blueberries on top those pancakes and you guessed right, top with a tbsp (or 2) of whipped cream and voila. Pretty, delicious and filling as heck!
