Lox-N-Cheese

Gee whiz!  I shouldn’t even have the word CHEESE in the title of this post otherwise it asserts my approval of cheese in your diet.  Or, can it mean that I assume you understand that cheese is a condiment and when you eat one portion of it, we can count it as acceptable?  Hmmm… I will state this.  Cheese offers no nutritional value so while most of you cheese conoseurs will eat it with anything and everything, this is simply another dish with the option of a low fat cream cheese as the “on the side” condiment to eat with the dish.  Got it?  Whew, glad I got that out of the way…

As a New Yorker, I LOOOOOOOOOOOOOOOOOOOOVE bagels and cream cheese topped by salty lox and tomatoes.  I have therefore satisfied that craving with all the ingredients found in this post, minus the bagel.  Is it the same?  Close enough, I say.  While I will forever be a NY bagel lover, I cannot eat it regularly otherwise I would be one pudgy girl.  I therefore do my lox-n-cheese alternative for those days I want something fun, but not bad for me.

All ya need:

  1. 2 oz of WILD (you must read the package cause otherwise it is farm raised – gross!) LOX (you can get this at Whole foods or Trader Joes)
  2. 1 tablespoon of low fat chive cream cheese
  3. 3 Persian cucumbers-chopped into cubes
  4. Optional: Cherry tomatoes, red onions and capers.

How to make:

You do not need to be a genius to figure this one out.  Simply wash your veggies, then slice ’em up.  Take out about the size of your palm some lox and add together with the other ingredients. You can also add onions and capers to this if you are very inspired and like that stuff.  Otherwise, enjoy this little snack on the go.  Super easy to pack to take with you too.  Pack a disposable fork  (brilliant right?).  Be creative and watch your lifestyle evolve into one amazing life.  You deserve to provide yourself with these opportunities.  Now, just do it! And moreover, be consistent!!!!!
